ALLIUM RESTAURANT - ORCHARD KITCHEN Allium offers a kitchen garden, using almost entirely 100% Mexican product and based on the work of artisan producers, as well as the urban garden that is located on the roof of the restaurant. We use products at the optimum point of freshness and maturity, with the least intervention on our part, allowing the quality of the product to be expressed on the plate and to be the protagonist. Whether it is cheeses from Atotonilco, vegetables from Ajijic, fish and seafood from Ensenada or Nayarit, mushrooms from Tapalpa or honeycomb from Veracruz, it is the small producers, through their work, who help us to shape the restaurant's cooking philosophy. and whom we try to honor with it: letting the product express itself on the plate.
